The software in the datascan was built in such a way where any gauges you currently have on screen (regardless of what type of gauge it is, or even what type of ECU you're connecting to), the logging is exactly the same.
So if you're wanting to log what's going on with the car for tuning purposes I'm guessing you'd want to measure things like rpm, engine load, fuel injector pulse width, and ignition timing. All of these are able to be logged on the ECUDatascan. On top of this the ECUDatascan will also log the GPS co-ordinates with every sample that it takes so you'd be able to pinpoint on google earth where that log was taken.
If there are any tuners who know than me let us know what other things would be useful to log for tuning purposes!

Edit: The logs are stored on the SD card in CSV format, so you'll be able to open it in Excel/OpenOffice and print/chart/sort, etc. the data fairly easily.
