Canberra? You're going a loooong way out of your way to find fun roads to Canberra from Sydney. You can go down the coast and cross the escarpment at Robertson, Braidwood or Bega - the first option adds about an hour to the trip, the second, 2 or 3 hours and while Clyde Mountain is fun, the coppers like it too much and the run down the Princes dieway is suicide inducing. Getting down to Bega is a day drive in itself and you're still at least 2 or 3 hours from Canberra. Brown Mountain is supposed to be pretty damn good fun though
On the other hand you can cross the Blue Mountains (Bells Line is better) and take a couple of different routes. One is to run down through Oberon into Goulburn. That's a reasonably fun drive but again you're adding at least 2 hours onto the drive. From Goulburn you have the run through Tarago and Bungendore which while a nice country road isn't what one would really call a fun road.
Another option is to head out to the Mid Western Highway (either through Bathurst or the backroads to Mandurama), down to Woodstock, Frogmore, over the wall of Wyangla dam, into Boorowa and back tracking into Canberra. I'd say that would add something like at least 4 hours onto the drive - a bloody long day.
I'm happy for others to post other interesting options between Sydney and Canberra though.
