As in how does the dyno know that it has this much torque it has at different rpm?

It's calculated from the power curve using the engine speed.

Update!!
Car was at the dyno day yesterday and while on th dyno started to lean out so the dyno operator stopped the run car made around 210 awkw then went from 10 to 14 a/f rather fast, not sure if it's the current tune or fuel pressure issue.

bruce also sucked my rom out and emailed me it do I'll have a look and see if anything stands out, don't know if I should change tuners!! Loosing faith after seeing another cars issues with his tune from revzone

Get to the bottom of it first and then start looking for another tuner, but if you need a workshop to sort out the issues then I'd recommend springy motors. ;)

Yeah I'll look into the fuel pressure myself and wait see how Bruce's car comes along, I also want to see how Gino's car goes at the edge as the tuner there seemed switched on, might be worth giving him a go

That would be for your car but nothing to worry about as you'd have had your ROM Ecuteked so they wouldve had to find your base ROM. Pity they just didn't use the search function.
