Mate, it might be easier to google whether it is safe plugging an output device (i.e. your screen) into an input RCA plug (i.e. source like a external DVD player)

My guess is it should be fine, just have a DVD playing on your car entertainment system and you'll know which one the output one is when a picture plays on the screen

All this is assuming it is via RCAs and if not, then identify the kinds of sockets they are (couldn't figure what else they'd be except maybe 9 pin DINs or S-Video) and see if it is safe doing the swapping stuff described above
Now that I'm in North America, I'm greatly concerned about raised pick-up trucks and owners of wedge shaped vehicles. Seriously, not only do you have to be concerned about one hitting you in an accident, they stand a good chance of driving over you at the same time!

What you need is this

http://www.walldonwaypartsshop.co.uk/product/aux_jack_conversion_h0010ag100

And yes they do post to Australia, and yes it is a genuine subaru part and yes it is cheaper than getting it here. I have one on order myself. About $110.00 AUD inc P/H.

I belive it is an NTSC not PAL output so ensure your screens support that.

Enjoy.
