Head Gasket 2002 Outback 2.5l

One head gasket has been leaking oil for a year or two and I'm thinking of changing it. I did a mechanics apprenticeship about 15 years ago but have since changed profession. I've read that the heads can be removed without engine removal and this is my preference. My questions are
1. I expect the 2nd head to leak eventually so should I do both or just leave the good one alone?
2. Brands of head gasket to use/avoid
3. A machinist recommendation to resurface the head in Sydney or can I just replace the gasket?

My experience?

replace both - common issue
2. Brands of head gasket to use/avoid - the new oem gasket kit is improved and proven to work just as well....I would avoid cometic gasket....if your really fussy....get cosworth...but OEM is just as good
3. A machinist recommendation to resurface the head in Sydney or can I just replace the gasket? - depends how bad the heads are? I would do it for insurance purposes..don't re use the same head studs....either get ARP studs or get new OEM
