"Failing temp" sensor

So I've had a fake Defi unit that shows various results from hard wire sensors - not odb2 for the past 9months

The intial coolant temp sensor that has been installed on the metal coolant pipe was going well for about 7 months and I believe kept on failing going into "open" state, possibly from a short? Have tried a SAAS replacement sensor and was working well for maybe a few weeks and is playing up again. When the car is powered on, but engine not running, the read out is fine. Does not "cut" out and go into "open" state

My oil pressure gauge is also playing up recently going into "open" state

I'm hesitant to think it's the Defi unit, because why now and not earlier?

You might be able to test the sensors using a multimeter set to K type thermocouple mode?
