Pricing + exhaust question for H6

Hey guys, just thought it'd be easy to get a general idea from anyone who comes across this on the forum.

I got a quote today of $450 to do my exhaust system, with raptor headers fitted (i've already got them), keeping stock cats, third cat delete with 2 into 1 pipe, continued through with a hotdog resonator all the way to the flanges for the rear mufflers (i've already got high flow mufflers, hurricanes).

Would you say this is reasonable?

Plus, the exhaust guy said going 2.5" the whole way from the headers would be good and got a little confused when I told him 2.25", what's better? Pro's & cons etc..

ditch the stock cats, they're the restriction in the system
merge from the headers into a single 2.5" then a single cat converter, hotdog and break away again at the diff to match the piping size of your mufflers.

simple and effective

I did this method using this cat:

Thinking of doing a similar thing with my 3.6r exhaust before getting a tune. People saying to delete a cat; is this legal? I've heard of big fines for not having any, but for example if it's meant to have 3 and you are caught only running 2 would you be in trouble?
