Im kind of new to the audio part of the car so here's my noob question.

I have a 1000w Sony subwoofer and a Sony Xplod 2/1 channel power amplifier XM-SD12X.

I have bought the Sony 8 gauge amplifier wire kit thing. Is the 8 gauge suited for that amp and subwoofer?

It'll be fine. You are only feeding the sub 120wRMS from that amp I believe.

Just one side note, it's not 1000w sub. That's is supposed "max" handling characteristic of the driver. Not that they mean much more IMO, but you want to look at the RMS (continuous) values.
