So I have just completed this upgrade on my 2009 MY10 Liberty GT, it is much more difficult than your standard install.
To follow the original 19-pin Din cable, you will need to remove the driver's side trim around the door, along with unbolting the driver's seat also helps quite a lot. It traces down the inner side of the footwell, and comes under the air-con vents for the rear passengers.
Due to the connections for the speakers being under the driver's seat where the stock amplifier is, you need to create your own cable to run to the back of the new head-unit. I have seen some people using their own amplifier, and wiring into the cables in the stock connector, but they are far too small to carry speaker power, only signal.
Fortunately, there is some great information about the plug being used in the amp in this thread:

I used solder splice connections to then wire it into two sets of 4 core cable from Jaycar, one set of splices on the connector end for the pin connections, then another set of splices on the head-unit end for the ISO radio connections.
Once everything is run up to the back of the head-unit, you can then use standard connectors. I was using a Sony XAV-AX6000, so I got the Aerpro APP8SP6 harness, along with the standard Subaru Aerpro APP091 harness.
I was able to get steering wheel controls working, as the Sony head-unit included the ability to map any function to buttons on your steering wheel.
I really disliked the look of the aftermarket "pocket" in the sets, so you can go to a wreckers to pick up some centre trim from 5th Gen Liberties or 4th Gen Outbacks that didn't come with the navigation.
Finally, the last bit that I have just completed, was hooking in the OEM back-up camera into the Sony, but that was even more of a pain in the arse.
