Help Please. Wheels/Tyres 101

Since I have no rubber I was thinking of a slight change by replacing my set with some 18s (nothing too drastic). I don't know didly squat about wheels and tyres.

My questions are basic but I have a few of them.

* Will 18's make the car look like they sit higher than factory 17s
* Would you expect performance to be affected by bigger wheels?
* Which rims will fit a MY05 GT?
* Which tyres are a good brand & all rounder?
* What else do I need to consider?

Falkens seem to be good value, I have the previous model to 452s (115s) and they are awesome considering what I paid for them.

I got quoted on RE 050 (for the 215 45 R18) for $340 fitted and balanced. Plus a free rotation and balance every 5,000 kms.

215/45R18 arn't mentioned on that post with all those sizes. Also what is the offset and other bits like PCD?
