05 GT Poor performance, Boost issue? NOW WITH VIDEO

Hello Everyone
I have an 05 LIB GT Auto that is really suffering.
The main issue is it drives like a non turbo. Doesn't reach full boost until late 3k early 4k and once it hits 1 Bar it bounces back and forward from .5 Bar to 1 bar. Issue is more felt when car is under load, Driving up a hill or trying to overtake on motor way. The car jerks rather bad whilst acceleration. I have taken to a reputable "specialist" in Rhodes Sydney, Charged just over $500 in labour to diagnose and all they can tell me is because the car has 170k. Never heard so much rubbish in my life. Car is completely standard with full service history. No engine light and I have changed front O2 sensor with genuine item just in case. I have also had a good look around and not evident boost leaks.
Any ideas? Thank you in advance.

I might have time on my next Sydney trip to log/diagnose and see if there is anything going on. No charge

give the catalytic converter a bit of a tap and if it sound likes it full of rocks it maybe the cat is breaking up and the pieces turn and essentially choke the exhaust

"no evident boost leaks" - do a proper test with a boost leak tester and a compressor. - if you can't do it yourself, take it somewhere and have them do a smoke test.

You could try NRG in Rydalmere https://www.nrgauto.com.au/. But in any case you should consider taking Matt (KiDo_Tuning) up on his offer.

I do my own servicing (Oil Change, Oil filter, top up levels if needed)
It has been much the same on fuel, I get between 500-550km tank, 600km on highway.

give the airflow meter a clean

Get the airflow meter cleaned, takes about 15mins. Two Phillips head screws, clean sensor with Spray and done.

tried looking for a guide

There's a how to linked in my tune faq in my sig...
viewtopic.php?f=56&t=20196&start=0

Also how to diagnose leaks. Etc.

Just because you can't see the leak doesn't mean you don't have one :)
I'd recommend logging it with an Ssm tool eg tactrix or btssm.
Maybe reach out to a local member.
