Custom Exhaust with Raptor headers

I purchased a pair or Raptor headers for my 3.0 Legacy.
They will be here in a few days.

The car already have a Stainless steel 60mm catback.
So I will need to build a custom exhaust between the headers and the catback.

I would like to keep catalitic converters for emissions tests every 2 years and avoid mounting it on and off every 2 years.

What could you advise for catalitic converters:
one on each side after the headers, like this one for example:

Or one center cat with 2 inlets:

Or something else?
Any advice for the brand, the type of cat and other things for the new exhaust?
I plan to add a bung for an additional LC1 Lambda sensor in the future, for tuning.

I am not even sure these are Raptor as I purchased them "used". Never mounted.

No I am in France.
It is EDM Spec.B Legacy. 3.0 with manual 6 transmission.

They are the first version of the header, you can keep the stock cats, nothing wrong with using them. Is that all the info you need?
