In regards to the cubby install, as far as I know there is a part for it... I found out about this from legacydan however I didn't try to source one as I decided to give it a shot myself. I've only seen one other member on legacygt.com do the same thing.
His and the picture you posted above is a little different in that the headunit and the face itself sits inside/flush with the cubby hole so no trimming or a little modification was probably required. I chose to have mine sit further out/inline and use the trim around the face of the HU as I wanted to be able to access the CD loader if I needed too. You could get away with angling it down a little more so there is not as much of a gap on top.

It cost me about $150 including another cubby hole to cut up, primer,paint,clear + filler and a few extra bits and pieces. Not yet 100% complete, will be repainted. Overall I'm very happy with it
It really isn't hard to do.
